Designing 24/7 Dining in Healthcare
Hospitals operate around the clock, but dining programs often do not. Even during regular hours, employees frequently turn to meals brought from home or purchased off-site. Learn how you can capture more of those existing meal occasions by making on-site dining more appealing and accessible to both employees and visitors.
Where Are Employees Getting Their Meals?
Hospital employees have at least one meal during their shift, but most of those meals aren’t purchased onsite.
- Healthcare employees report that only 38% of their meals are from on-site dining venues.1 Another 13% purchase food off-site, 45% bring meals from home, and 4% purchase from other sources.1
- 52% of hospital foodservice operators identify food brought from home as their primary source of competition.2
The opportunity isn’t necessarily to create more demand—it’s to capture more of the demand already present throughout the day.
3 Ways to Grow On-Site Dining
Convenience matters to time-pressed healthcare workers, but proximity alone is no longer enough. Enhancing quality, accessibility and credibility can help bring more employees and visitors into on-site dining.
1. Make Menus More Enticing
Food quality is becoming increasingly important to healthcare diners. Operators have an opportunity to respond with menus that balance familiarity, variety and changing preferences.
- 72% of hospital employees and visitors say better food quality would make them more likely to eat on-site (up +9 points from 2023)1
- Quality now outranks value/price or speed of service as a decision driver1
- Both comfort foods and plant-based offerings are growing on healthcare menus, showing that comfort and health do not need to be competing strategies3
2. Extend Access Beyond Cafeteria Hours
Hospitals are using automation and flexible service formats to extend dining access without requiring a fully staffed cafeteria around the clock.
- Nearly every hospital foodservice operation offers breakfast, lunch, and dinner, but access beyond those core meals remains limited2 – only 14% of hospitals offer 24-hour dining, compared to the 55% of healthcare consumers who express interest in it1
- WellSpan York Hospital is using RoboEatz Autonomous Robotic Kitchen technology,4 an automated kiosk that can prepare customized meals such as bowls, pastas and salads using as many as 80 ingredients
- Other hospitals are extending access through smart vending machines, unattended micro-markets, and cashierless C-stores
3. Build Your Program with Trusted Partners
Hospitals can introduce new dining solutions without placing additional development demands on the existing foodservice team. Partnerships with trusted retail and restaurant brands help infuse excitement into the menu while adding variety, quality and culinary credibility.
- After employees requested more fresh and convenient choices, Rochester General selected Wegmans, a local partner already associated with quality, variety, and prepared foods5
- Rochester General’s grab-and-go stations make salads, bowls, subs, pasta and ready-to-heat meals available until midnight, complementing the hospital’s existing 24-hour employee micro-market5
Bringing Quality and Flexibility Together
Better access makes on-site dining an option. Better food can make it a destination. By combining culinary credibility with flexible service formats, hospitals can extend the reach of their foodservice teams and provide employees with satisfying options across shifts. In doing so, on-site dining can become an always-available resource that supports wellbeing, strengthens the workplace experience, and captures more of the meals employees are already eating.
